In one of your answers you wrote about FluidNC, hence my question.
I read your thread and saw that there is a problem with TFT.
I also saw a few videos about FluidNC and you can see that this software is interesting and, as you write, much faster, not to mention the simplicity of loading.
But what if my plotter stops going crazy, GRBL will completely satisfy me

I didn't write to not past under FluidNC with the Grbl board v.2.0, but more or less that FluidNC will not provide a lot of benefits compared to Grbl_Esp32. This is not du to FluidNC but to the Grbl board limitations whom the electronics is not designed for FluidNC.
Regarding the speed, what I wrote is that using FluidNC, I note the displacements actualisation on webUI was quickest. But after reflexion, I think this is due to a new version of WebUI specially designed for FluidNC, and which is not seem to be compatible with Grbl_Esp32. To be honest, I didn't tried to upload the last WebUI (v.3, I believe) to an ESP-32 module containing Grbl_Esp32.
Look at the board I designed and use to test all the FluidNC features, here.
The purpose is to build a final version board as this one. It was my first try but it never worked. I have being to learn electronics, electronics design and FluidNC functionement since 3 years only.
All my work in this topic, that I continue to regulary update.

I asked several sellers, all of them claim that their tiles are Espressif, although such markings are not visible in the photo of the system.
Do you think this model is ok?

The ESP-32 chip is always from ESPRESSIF, but the module (the PCB and the electronics components arround the ESP-32 chip) could be from ESPRESSIF) or other makers.
Anyway, the ESP-32 module whom you posted the link is not compatible with the Grbl board v.2.0 because of its pins number. You need a 38 pins module. This one, from the same store will be compatible and work, but it doest not use the ESP-32E (last ESP-32 version from ESPRESSIF).
Here is an official ESP-32 module from ESPRESSIF, and here is another one. Do not purchase this module because I a not sure it will automatically boot up on the Grbl board v.2.0.
In the next weeks, I will have to place an order at DigiKey for some electronics components I miss to build my 6-axes FluidNC board. By curiosity, I will put one of these modules in my basket to test it on the Grbl board v.2.0 of Romain.

No. This easier method is only for flashing the ESP-32 containing the firmware of Grbl_Esp32. If you want to easier flash the TFT firmware in the other ESP-32, use this archive with is based on the same model than the Grbl_Esp32 easier flash method. Excepted you will have to configure your wifi network using a wifi.cfg file you will put at a SD card root you will need to insert in the memory card reader at the backside of the TFT. Read the install_note.txt file in the archive. The only difference with the classical flashing method is you do not need to use ARDUINO IDE and the libraries. This method contain already compiled firmware.

This is what came to my mind. It's a pity that when selling the V.2 board you don't add a compatible ESP-32 module.

If I use these two new methods, do I need to load TFT or GRBL first? It's a pity that there is no manual describing how to reprogram the ESP-32 using these methods.
Is there anything else I need to do apart from these two uploads? The instructions on the website show the option with Arduino IDE soft, there are 3 steps, here you can only see 2?
I think that many people like me are not strong in this topic
Just a suggestion, maybe it would be worth adding the option of adding a ready-programmed ESP-32 to the store (I would buy it for the ordered board!!!)
